Scientific Name: Abalistes stellaris
Up till now, nobody keeps these fish as they think that the skin was too tough to fillet and it was thought that they were not very good to eat.
The following story will prove that myth busted!!
Place the fish belly side toward you and with a sharp knife; start at the anal hole.
Cut all the way to the tail.
Put your thumb in to separate the skin from the flesh. (This is easy)

With a Pair of pliers (If you don’t have strong fingers) peel the skin back.

While holding the skin back cut the fillet from the frame.
Cut out the pin bones.
Repeat the other side.
Then you have two nice fillets that are very tasty. Enjoy.
Now the best way to eat these, we have found, is roll them in just bread crumbs (You can also roll them in plain flour first, then in an egg wash and then bread crumb) and shallow fry until golden brown.
