This is a very simple technique from Alan Griggs (Ayr, Nth QLD) that removes the cheek of the Flathead to eat.
No 1
Lay your Flathead on its back and with a sharp knife follow the cheek socket.
No 2
Cut all the way to the edge of the mouth
No 3
Go back to the start and follow the bottom of the the cheek
No 4
and separate it from the skin
No 5
The cheek fillet and the empty socket.
Repeat the other side and have two cheeks to enjoy.
And there you have it, a beautiful piece of fish that is usually thrown away. Just toss in some breadcrumbs and enjoy!
